Sapporo’s Shime-Parfait Tradition Brings a Sweet End to Nights Out

Sapporo’s shime-parfait tradition replaces late-night ramen with elaborate parfaits of sorbet, gelato, and fruit served at specialty bars. The term was coined in 2015 by designer Hitoshi Kobayashi during a branding project.
